Birth of our beers

Only the most select of the freshest and finest barley malts are brought to our brewery. These malts are crushed in our own mill to produce "grist", which is mixed with hot water at precisely controlled temperatures. This stage of the brewing process allows the natural enzymes of the malt to convert insoluble starches and proteins into soluble sufurs and amino acids which dissolve in the water to form "wort".

The wort is separated from the husks and residues in a mash filter. As the wort floats through structural frames, a layer of spent grains builds up, creating a natural filter. The wort leaving the mash filter is thus thoroughly clarified.

The clarified wort is returned to the brewing tank where fresh hops are added and patiently boiled under controlled conditions to create a stable malt extract of superior aroma, with a rich and bitter malt flavor. Next, the malt extract is placed into a cooling tank and quickly cooled to a prescribed temperature. In this release tank, air and yeast are added to start the fermentation process.

After roughly 7 days, the young beer is placed into a low temperature storage tank and, depending on the type of beer, left to mature from between 15 to 120 days. After closely monitoring the level of maturity until just as desired, the finished product is bottled and prepared for shipment.
